Melt-in-Your-Mouth pineapple tarts is one of the goodies that available on the coffee table during Chinese New Year. I have make the golf ball pineapple tarts that are likeable among the relative. I don’t make my own pineapple filling. I made it before and it’s really too cumbersome. The pineapple paste filling are also easily available in the market now
1. Plain flour – 1000g
2. Icing Sugar – 86g
3. Butter, salted/unsalted – 620g
4. Egg yolk – 9 pieces plus 1 piece for top brushing
5. Pineapple paste – 1000g
Take-out butter and leave at room temperature for about 3 hours (do not heat-up butter).
Sift icing sugar and flour.
Mix butter & icing sugar,then add egg yolk and flour to form dough.
Knead the dough into a ball at 10g each.
6g each ball
Wrap the pineapple ‘ball’ with dough.
Use the small paper cup to hold each ‘golf ball’ pineapple tarts
Brush some egg yolk on top of pineapple tart.
Pre-heat oven on 180 degree Celsius for 15-20 minutes
Bake the pineapple for about 15-20 minutes
